French chef born in Trets in 1818.
He was apprenticed in the Rothschild family kitchens, made famous by Carême. He then entered the "Café Anglais" uder the orders of Dugléré, then went to "Tortoni" and the "Rocher de Cancale".
But his career mainly took off abroad. First in Russia with Prince Orloff and in Germany where he was kitchen chef for William I with Emile Bernard who had been in the service of Napoleon III.
Urbain Dubois was a specialist in settings and he especially liked presentations on a stand. He was also an advocate of Russian-style service where the food on the dishes is presented cut up in contrast to the French service. He died in Nice on 14 March 1901.
