Rare work by Charles Durand who was a famous cook and gastronome.

At the age of 13, he began his career as a cook in the service of the bishop of Alais, Cortois de Balore. He then left to practice his art in various regions, at the age of 20, then came back to Alès, where he opened a restaurant in his name, to finally settle in Nîmes.

In 1830, he published Le Cuisinier Durand, a work that is one of the first regional cookbooks in the history of French cuisine, republished several times and constantly plagiarized.

Charles Durand is nicknamed the “Carême de la cuisine provençale.”

He became the apostle of Provençal cuisine and local cuisines unknown outside of the variety. He a made a specialty of Nîmes known in Paris: the brandade de morue.

Interior in decent condition despite old dampstains, which are visible in a more pronounced way at the beginning and end of the book, charming engravings in the text and a charming portrait in frontispiece, marbled endpapers-
