Il Valpolicella Sant'Urbano Appassimento di Speri è uno dei più significativi Valpolicella Superiori della zona ed è ottenuto dalle uve del vigneto Monte Sant’Urbano, una bellissima collina nel comune di Fumane dove la vite sembra trovare la sua naturale collocazione. Dopo un’accurata selezione le uve vengono appassite per 20-25 giorni circa dando concentrazione, ricchezza nei profumi e morbidezza, che trovano il perfetto equilibrio dopo circa due anni di invecchiamento.
