Quinta dos Carvalhais Único is, as its name suggests, a unique wine, a red wine from Dão of exceptional quality, the ultimate exponent of the elegance and richness of this brand. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with intensely delicate flavors and the unique personality of the region.
The terroir of Quinta dos Carvalhais is expressed both in the color and aromas of this wine. It has floral notes, black and wild fruits, resinous nuances, forest, moss, pine and cedar, "sous-bois" and a very fresh menthol touch. It has a firm and defined attack, with polished tannin, in an elegant and enveloping body. The aromatic complexity is confirmed in the mouth. The wine ends in a voluminous, delicate, long and persistent finish.
GRAPES: 60% Touriga Nacional, 20% Mixture of red varieties, 20% Alfrocheiro Preto
VINIFICATION The grapes were harvested and vinified separately by variety. They were unloaded from the 20kg boxes onto the sorting table, passing through the destemmer-crusher, until falling into the small stainless steel vats. Before alcoholic fermentation, Alfrocheiro spent 4 days in cold pre-fermentation maceration. Alcoholic fermentation lasted 10 days, at an average temperature of 28ºC, with all varieties remaining in post-fermentation maceration for 10 days.
Like all red wines from Dão, they have a very long shelf life in the bottle, and can easily be consumed for up to 10 to 15 years. Once the bottle is opened, it is best to drink it on the same day.
