There are numerous reviews that place Cantabrian viticulture and, specifically, txakoli in medieval times. The pilgrims of the Camino de Santiago del Norte were the ones who implanted, in these Guipuzcoan lands, the vineyard culture that came from Northern Europe. Thanks to that ancient viticultural heritage and the good work of those monks who came from Northern Europe, txakoli experienced boom times between the 11th and 16th centuries. In more recent times, txakoli has gone from being a wine linked to the homestead and family consumption, to achieving a strong position in restaurants. more avant-garde and prestigious, thus achieving a solid and notable position in consumer perception. In this viticultural framework, in 2015 we started the Izar-Leku Mahastiak project, which unites the Zapiain & López de Lacalle families. With the help and experience of winegrower Inaxio Manterola in Zarautz, we cultivate 1.50 hectares of Hondarrabi Zuri and Hondarrabi Beltza, with which we make a sparkling wine.
