2021 Titan of Távora-Varosa Daemon White 5 x 0.75L 5 Bottles Távora-Varosa Region WINEMAKER: Luís Leocádio. AWARDS/RECOMMENDATIONS 17.5 Points, Vinho Grandes Escolhas WINE VARIETIES: Gouveio (30%), Cerceal (30%) & Malvasia Fina (40%). VINIFICATION Fresh grapes at their ideal point of ripeness, picked by hand into 20 kg boxes, are transported to the winery where they were subjected to careful manual selection, de-stemming and gentle crushing. They are pressed in a pneumatic press and the resulting must, in a stainless steel tank, decants at 8ºC for 48 hours. Alcoholic fermentation began at controlled temperature in stainless steel, followed by transfer to French oak barrels. where it continued and aged for another 12 months, with regular stirring of the fine lees. TASTING NOTES Intense straw-colored wine, with expressive aromas of smoke, wet stone, yeast, toasted bread, and white flowers. On the palate, it has a lot of volume and structure, supported by a lively and refreshing acidity. SERVING Enjoy with dishes of rich and fresh flavor, such as grilled shellfish, charcoal-grilled fish and oven-baked fish. Serve at 10ºC – 12ºC. HISTORY The TITAN project's work, from the beginning, has always focused on finding old vines in the most authentic and least explored places, where there were new stories to tell through wine. The passion for the Távora-Varosa region dates back a long way, both due to its proximity and its inspiration in Aquilino Ribeiro's novel "Terras do Demo" (Lands of the Devil). A rugged, rugged mountain range with poor terrain that keeps its people on the fringes of civilization, allowing nature, and often the Devil, to dictate the rules. A region of excellence for the production of Portugal's finest sparkling wines, we wanted to do something different and highlight still wines with a mineral, fresh, and unique character—in essence, as we affectionately call them, "Sparkling wines without bubbles."
