Founded in 2005, Kilchoman is the first distillery to be built on the island of Islay in over a century. Cradled by the sea spray of Machir Bay beach, the first single malt was born in September 2009. Built on the model of a 19th century "farmhouse distillery", Kilchoman makes a point of handcrafting a peated malt with fine saline accents.
Kilchoman is true to Islay's rich farm distilling heritage, using locally cut peat, slowly distilling by hand, maturing on Islay and bottling on site without colouring or chill-filtration.
Created from the same recipe of casks as our regular Sanaig release, Sanaig Cask Strength was matured predominantly in oloroso sherry casks. However, instead of adding water once the casks have been selected and vatted, this limited edition Sanaig Cask Strength has been bottled at its natural cask strength of 57.8% alc./vol. The result is an intense combination of rich peat smoke, cinnamon sweetness, and stoned fruits with waves of citrus, mixed spices, and dark chocolate.
