Prosper Montagné, born in Carcassonne on 14 November 1865 and died in Sèvres on 22 April 1948, was a French head chef.
In 1920, he finally opened his own restaurant in Paris, the “Montagné Traiteur.” In a white coat, the master prepared the most exquisite dishes himself. After this experience, he decided to retire to Sèvres to continue writing. He passed away in 1948, not without having received the highest French honorary decoration, that of Chevalier de la Légion d’Honneur.
A museum in his name was inaugurated on December 6, 1989, at the Centre de Formation aux Métiers de l’Hôtellerie, de la Restauration et du Tourisme de la CCI in Carcassonne, his hometown.
