The Cuvée des Six Ifs from Domaine Les Horées is a Burgundy red that really stands out. It’s an original blend of Pinot Noir, half from the Mâconnais and half from Savigny-lès-Beaune (specifically from the “Les Boutières” plot). This mix gives the wine more body and structure than other cuvées from the domaine. On the nose, you get aromas of cherry, dark berries, and a hint of licorice. On the palate, it’s rich, with present but ripe tannins and a youthful, slightly wild finish. It definitely has aging potential and will soften beautifully with time. Vinification is artisanal: about 80% whole cluster, no sulfur added before fermentation, and aging in used barrels for around a year.
