2012 Dom perignon - Champagne Brut - 1 Bottiglia (0,75 litri)
Dom Pérignon is a brand of champagne produced by Moët & Chandon. It is named after Pierre Pérignon, a Benedictine monk who discovered the method for creating sparkling wines. The first vintage of Dom Pérignon was in 1921 and it was only released for sale on August 4, 1936, after the Great Depression. Dom Pérignon is a vintage champagne, meaning that it is only made in the best years and all the grapes used to make the wine were harvested in the same year. Many champagnes, on the other hand, are non-vintage, meaning that the champagne is made from grapes harvested in several years.
Dom Pérignon only offers great vintages of champagne. Dom Pérignon Vintage is made exclusively from the best grapes of a single year, reinventing itself by interpreting the unique character of the seasons and daring not to produce a Vintage if the harvest does not meet high expectations. After a minimum of eight years of aging in the cellar, the wine reaches the perfect balance that represents Dom Pérignon, its greatest promise. This is Dom Pérignon Vintage: the fullness of harmony.
The wine has a luminous sweetness of tropical fruit (green mango, melon, pineapple) that shines instantly. It then gives way to more tempered notes, the tingle of orange zest, the mist of a mandarin. The wine breathes, revealing its freshness. The flower after rain. A tactile sensation of peony, jasmine and lilac.
The wine immediately imposes its ample presence, full and massive. A delicate sensation dominates since the tactile is quickly surpassed by the aromatic. The body unfolds generous, firm and controlled. Then it contracts, letting the wine vibrate with spices and pepper. The energy is sustained to a sparkling saline finish.
