DESCRIPTION: The grapes are hand-picked after the second half of October, softly stemmed and crushed . The must and the mark obtained are fermented for 8 days at 18° - 20° in special temperature controlled containers with frequent pumping to obtain a good extraction of colour and aromas. In the second half of March, the "RIPASSO" ("REVIEW") (refermentation) technique is applied on the Amarone pomace, obtaining an excellent Valpolicella Classico Superiore Ripasso. After various processing stages, it is aged for at least 18 months in small to medium capacity oak barrels, and is refined in the bottles for at least 3 months. Colour: Deep ruby red - Delicate flavour, full and dry, with hints of cherries and berries.
