1979 Château Dassault, Saint-Emilion Grand Cru Classé (3)

About the domain:
For Michel Dassault, Château La Couperie was love at first sight and having bought it in 1955, he gave it his name. Many investments were made in order to improve the quality of the wines. In 1969 the château obtained Grand Cru Classé status. Today it is Laurent Dassault, the industrialist's grandson, who manages the château. Sustainable farming practices and two rounds of leaf removal help to keep the vines in perfect health, and enable the harvesting of extremely ripe grapes. In order to select the best grapes, the château installed an optical sorting table in 2009. Small concrete vats are used for vinification, enabling the grapes to be separated on a plot-by-plot basis. The wines are aged in new barrels for 14 to 16 months.

About the cuvée:
Château Dassault is a fine, classical Saint-Emilion. Rather reserved when young, it gradually unfurls aromas of blackcurrant, liquorice and spices. he palate is full-bodied, rich and smooth.

1979 Château Fonplegade, Saint-Émilion Grand Cru Classé (2).

About the domain:
Dating back to the Gallo-Roman era, the vineyard is planted on clay-limestone soil.

About the cuvée:
This wine is very typical of the appellation, with an intense colour, and powerful, delicious tannins. It reveals notes of small red berries, spices and humus. This is a wine that improves by being kept for a few years.

1979 Clos des Jacobins, Saint-Emilion Grand Cru Classé (1)

About the domain:
Clos des Jacobins, a Saint Emilion grand cru classé, and Château de la Commanderie, a Saint-Emilion grand cru, were purchased in 2004 by Thibaut and Magali Decoster. On the sage advice of Hubert de Boüard (of Château Angélus) both vineyards were restructured and rejuvenated.

Clos des Jacobins' vineyard consists of a single block of vines around the winery. Located at the base of a hill, they benefit from the erosion of the plateau which creates a clay and limestone scree.

About the cuvée:
Rich, full-bodied with medium strength tannins, this wine is a model of complexity. On tasting it is usually richly coloured and well-rounded with a creamy texture. Very consistent, it has the potential to age for 15 years.
