Il Brunello “Il Greppo” è una delle più grandi eccellenze d’Italia, tra i vini rossi più famosi al mondo e stella leggendaria della produzione di Montalcino. Viene definito il padre dell’intera denominazione perché è colui che ha dato i natali alla produzione del famoso e blasonato Brunello di Montalcino. Facciamo un passo indietro e cerchiamo di capire come Biondi Santi, la storica cantina, arrivò a sedersi sul trono della collina di Montalcino. Fino al 1825 il vino più famoso e apprezzato in quel fazzoletto di terra toscana era il Moscadello, un bianco leggermente dolce e di facile beva. Fu proprio in questi anni che sulla scena arrivò Clemente Santi, il quale iniziò ad incuriosirsi e studiare le caratteristiche di un clone del vitigno Sangiovese, il Sangiovese Grosso, chiamato Brunello dai cittadini locali per il colore intenso e scuro del suo manto. La storia riprese nel 1860 quando Ferruccio Biondi-Santi, nipote di Clemente e figlio legittimo di Jacopo Biondi e di Caterina Santi, iniziò a produrre un rosso a base di questa uva che dimostrò subito di avere tutte le carte in regola per poter diventare qualcosa di straordinario. Proprio in quegli anni la catastrofe portata dall’insetto della fillossera colpiva le viti e saccheggiava i raccolti come una vera e propria epidemia, mangiando tutto quello che trovava sul suo cammino. Così gli agricoltori, spaventati e impauriti dai danni dell’insetto, cercarono di ottenere un rapido riscontro finanziario delle nuove viti, vendendo i vini rossi sul mercato nel modo più veloce possibile. Ferruccio non era della stessa opinione e remò in controtendenza. Pensava che il vino era l’amico più fedele del tempo e che soltanto con il passare degli anni esso poteva diventare grande. Così vinificò in purezza il Sangiovese Grosso che coltivava nella sua tenuta il Greppo e lo aspettò a lungo in cantina fino al raggiungimento del suo perfetto grado di maturazione. Qualche anno dopo lo assaggiò e sbalordì ogni cittadino. Quel giorno rimase nella storia perché nacque il primo e storico Brunello, le cui radici rimangono per sempre legate alla famiglia Biondi Santi. Da quel giorno il prestigio e la fama di questo marchio cominciò ad aumentare di valore, grazie a interventi mirati, modernizzazione delle tecniche e a selezione dei migliori ceppi di Sangiovese.
