Gaggia was founded in 1948 by Giovanni Achille Gaggia
He is credited with the intuition to remove steam from the coffee making process, by using a spring combined with a lever piston, which ensures there is enough pressure to push the water through the coffee for a short enough time to allow the extraction of a Ristretto coffee.
It is 1947 and with this invention Achille Gaggia determines the beginning of the worldwide success of espresso and his machines next to the production of cafe machines, Gaggia immediately puts on the market a model for domestic use: the Gilda (1952) lever machine with closed boiler, and after that the Gilda 54 (1954), with two levers and open boiler.
