The Extra Virgin Olive oil of Ornellaia is obtained from the squeezing of olives from about 2000 plants, mostly secular, that dwell inside Ornellaia.
In the olive groves of Ornellaia are grown varieties such as Frantoio, Moraiolo and Leccino, but also more local varieties such as Gremignolo di Bolgheri, Olivastro di Suvereto and Ornellaia variety, that has taken its name from the farm around which the estate has developed.
Manual harvesting allows to select the best-quality olives of each plant while maintaining the integrity of the fruit in all its freshness. To prevent oxidation and obtain an oil of the best quality possible, the olives are brought to the mill where squeezing is carried out within two hours of the arrival.
The oil, fresh from squeezing, with its fruity aroma and rich in antioxidant properties, is first filtered and then stored in steel containers at controlled temperature where it keeps the organoleptic characteristics at best.
