Japanese Nagomi knives are the premier knives, handcrafted by the Mitsuboshi Cutlery Company of Japan. These knives are cold forged from 33 layers of Damascus steel with the middle layer being made of AUS 8 as opposed to the usual VG-10. AUS 8 steel is slightly softer than VG-10 which makes it easier to re-sharpen. Each knife is individually hammered, so that no two knives are exactly the same. The knives feel quite heavy for Japanese knives and will suit those who like the sharpness of Japanese knives, but prefer the weight of a European knife. The knives are finished off with riveted handles made of grain wood, giving a rustic and stylish look
