Michel Sajous founded the Chelo distillery north of Port-au-Prince in the St. Michel de l’Attalaye region. He cultivates several varieties of sugarcane, including Cristalline, on 30 hectares. His clairins are made exclusively from freshly pressed sugarcane juice. The result is clairins of great finesse, with vibrant, vegetal aromas. The old Sajous is made with Cristalline sugarcane, an old variety recognized as one of the best, grown only in Haiti and harvested exclusively by hand. Fermentation takes place with indigenous yeasts, and the still used was specifically designed by Michel Sajous. This is the first Sajoux aged in sherry casks, and one of the first rums in general to have been aged in this way. The casks, which previously held Oloroso and PX sherry, come from the Lustau distillery. The rum was aged for four years near Port-au-Prince, in a tropical climate. This aging process brings a unique complexity and depth. An explosion of flavors, a vibrant, highly floral palate with hints of cooked fruit and spice. The sherry adds another dimension, with a velvety and intoxicating finish.
