This Red "Testamatta" comes from pure Sangiovese grapes from old vines, whose age is around 80 years. Cultivated with the guyot and spurred cordon system, they grow in the soil rich in clay and marl that surrounds the town of Fiesole. The vinification takes place in barrique, where the must ferments spontaneously thanks to the presence of indigenous yeasts. The subsequent refinement lasts two years, and is carried out in French oak barrels in which a small part of the wood, about 10%, is new.
