Castagner's Fuoriclasse Leon Riserva 3 year grappa comes from the pomace of selected red grapes. The pomace is treated and preserved with Grappasystem, a system thanks to which it is possible to proceed with a controlled fermentation, obtained with the addition of selected oenological yeasts. Grappasystem guarantees preservation of the peels in an ideal environment and with the right pH level, inside food-grade plastic film tunnels, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to stay very fresh and keep their aromas intact even for several months. The distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column systems, in three different distillations. The Master Distiller is entrusted with the delicate task of establishing when the grappas obtained are ready to be combined into a harmonious blend. Aging of at least 3 years takes place in small oak and cherry barriques. On the nose there are vinous aromas of vanilla, raisins and wood. On the palate it is soft, harmonious and persistent. Excellent at the end of a meal, it is served straight at room temperature or accompanied by dark chocolate. The “Fuoriclasse Leon Valdobbiadene Prosecco” Grappa from the Castagner distillery in Treviso is produced with the fragrant and fresh pomace of Glera grapes from Valdobbiadene, the most prized and historic area of ​​the Classic Prosecco Superiore area. It is a white grappa, aged only in steel, which favors purity and expressive elegance, preserving intact all the varietal aromas of a semi-aromatic grape such as Glera. It seduces with delicate floral aromas and fragrant fruity aromas, which make the taste particularly soft and enveloping. Torba Rossa is a grappa with an extraordinary aromatic breadth, obtained from the skilful toasting and distillation of red pomace from the Veneto area. The light toasting of the pomace gives the distillate a unique originality, a fine and harmonious taste, a vinous aftertaste with spicy tobacco notes. An initial aging period, of at least 12 months, is spent in small cherry barrique barrels which give Torba Rossa its characteristic amber color and the bright softness of morello cherry and ripe plum aromas, moderated by the more delicate floral fragrances. In the second period, Torba Rossa becomes reserve, resting for another 6 months in oak barriques. The taste becomes rounded and enriched with refined sensorial nuances. It is the unique personality of a long and persistent profile. Torba Rossa is a meditation spirit: it should be tasted slowly, in a balloon-type glass that allows you to grasp its many aromas.
