Regarding the polishing, it has been finished to a mirror-like shine. Please refer to the 10th photo. Furthermore, concerning the sharpening process, it was sharpened gradually starting from a 200-grit edge, with the finishing touch achieved at 6000 grit. As a result, it has become a knife that cuts exceptionally well, so please handle it with care. Total length: 34.7 cm Blade length: 22.2 cm Blade width: 3.3 cm Weight 100g About Yanagiba: Yanagiba knife is a classic Japanese knife designed specifically for slicing boneless fish fillets, perfect for creating delicate Sashimi and Sushi. Translated from Japanese, Yanagiba literally means "Willow-leaf blade," a fitting comparison for its long, narrow, and incredibly sharp blade. Yanagiba is traditionally used primarily for cutting fish in Japan, but in recent years they have been increasingly purchased by people from other countries who don't usually eat sashimi or sushi. This is because Yanagiba is versatile and can be used to cut a variety of things, such as roast beef and ham. And by using a Yanagiba knife, the cells will not be cut in a way that crushes them. You can experience the beauty of the cross-section of the ingredients and the difference in taste. Maintenance: About the rust, after use, wash off dirt and remove moisture with a dry cloth to prevent rust. Be especially careful when cooking raw meat, raw fish, or raw foods that are high in salt. Precautions for use: Please avoid cutting hard objects with the Yanagiba knife at all costs. The blade of the Yanagiba knife is designed for cutting soft items and is delicate. I would like to reiterate this because it is important. To ensure long-term use, please do not cut hard objects with the Yanagiba knife.
