Valquejigoso is a wine project located in the southwest of the province of Madrid. The project was started by the Colomo Carmona family in the early 90s. During these years, the planting of the vineyard, the construction of the winery and, above all, where The most dedication has been contributed is to the knowledge of the terroir of this place. In the 38 hectares. of vineyard capable of producing Valquejigoso V2 2007, there are 69 characterized plots, because due to the orography, soil profiles and exposures are very varied within our vineyard, which is why microplots with very particular characters are generated. All these plots are worked throughout the year with different viticultural practices, always from the point of view of respect for the environment that surrounds each of the plants, so that each microplot expresses in each vintage everything that happened in said place. In Valquejigoso V2 2007 we use grapes from 23 of the 69 plots, the varietals that make up this wine being Cabernet Sauvignon, Syrah, Cabernet Franc, Petit Verdot, Merlot and Negral, the latter native to Madrid. After a particular preparation for each of the plots and after 27 months of aging in new French oak barrels, the wines from these plots reached the maximum expression of the terroir, with this wine being bottled in May 2010. This wine is designed to evolve towards its fullness in the coming years, which is evidenced by its intense cherry red color. Aromatically it is of great complexity, a nose that will change over time, but will always remember the fruit. Ripe black wine, with minerality in the form of graphite, balsamic, along with aromas of scrubland and fine spices. In the mouth it is very fresh with very firm but elegant tannins, with great balance between fruit and minerality. Valquejigoso V2 2007 can be enjoyed anywhere in the world in perfect harmony with the most exquisite and demanding cuisine of each region. The production of Valquejigoso V2 2007 is 18,748 75 cl bottles.
