Gèss is obtained from only Gewürztraminer grapes. The name Gèss links the wine to the territory: Gèss is nothing other than the dialect translation of the word chalk. Our company develops almost entirely on a chalk vein that was clearly visible at the time when the area was dedicated to the extraction of this material; today there is no trace left of the quarry. The vineyard, from which Gess is obtained, was planted in 1970 and we have a yield of 50-60 quintals per hectare. To maintain the integrity of the berries and be able to select the bunches, the grapes are harvested by hand and placed in boxes. Limiting contact with oxygen as much as possible, after a week of maceration on the skins the crushed grapes carry out their fermentation in steel. Here it will remain until the following summer, spending both the winter and summer seasons, to mature and obtain the right stabilization. Our hope is that the structure of this wine will help it evolve over time in order to obtain a Gewürztraminer that lasts and evolves over the years.
