winemaker Dario Princic represents a point of reference in the artisanal wine scene of the Collio Goriziano, an area with a very high wine-growing vocation located on the border between Friuli-Venezia Giulia and Slovenia. In particular, Dario is considered among the masters of the so-called "orange wines", macerated white wines that have written an important chapter in Friulian oenology by taking up an ancestral winemaking technique. Princic operates in the municipality of Oslavia, an area known for the quality of its orange wines, where in 1993 he began marketing the first bottles under his name after years spent selling the grapes to local wineries. The vineyards cultivated by Dario Princic, distributed over almost 10 hectares, reach up to 60 years of age and are rooted in soils composed of ponca, a characteristic type of soil made up of alternating layers of marl and sandstone. Following the principles of organic farming, Dario breeds both native varieties such as Friulano and Ribolla Gialla and international vines strongly linked to the Collio area, such as Pinot Grigio, Chardonnay, Sauvignon Blanc, Merlot and Cabernet Sauvignon. The rather steep slopes force the processing to be carried out entirely by hand, including harvesting, which is carried out only when the grapes have reached full ripeness. This is followed by the destemming of the bunches and the alcoholic fermentation, which occurs completely spontaneously inside open wooden vats, accompanied by prolonged skin maceration also for the white grapes. The subsequent long aging takes place in large barrels or old barriques, containers that do not release any aroma to the wine but rather guide it in its evolution. During the entire production process, the use of clarification or filtration operations is excluded while the addition of sulphites is kept to the bare minimum. Through this genuine and non-interventionist approach, Dario Princic creates red and especially orange wines with a proud and indomitable soul, characterized by great depth and energy, as well as excellent longevity which can lead them to evolve in harmony even for more than 10 years.
