Batch 12:
Fragrance: Bourbon, light wood, plum, licorice, raisin and almond flavors.
Quadrupel is still clearly present in both smell and taste, but has made a good marriage with the whiskey and cognac flavors. The taste is drier than the previous batches, making the body slightly less bombastic.
Furthermore, again an obvious Bourbon aroma, although less present in the foreground than in the fragrance. Furthermore, the taste is complex but still quite soft (probably partly due to the 18 months maturation). The mouthfeel is slightly pungent with a tannin bitter and slightly smoky aftertaste.
This batch was blended in September 2012.
Batch 13:
The first drink clearly tastes of soft red wine, followed by wood, tannins and smoke that slowly accumulate in the light sweetness of honey. As the beer warms up, the taste of oak becomes more prominent and the beer becomes more tannic. The bitterness is therefore sufficiently preserved. This Oak Aged is medium sweet and drier than the basic concept.
Scent: soft with striking wood notes and floral and sweet like blossom honey. An almond and vanilla scent are also noticeable with of course the well-known Quadrupel scent in the background.
This batch was blended in January 2013.
Batch 14:
The smell of batch 14 is dominated by cognac. This is clearly defined by the flowery acacia, prunes, grapes, almonds and vanilla, not to mention lightly roasted wood. The regular and well-known Quadrupel flavor remains recognizable in the background. With the first sip you have the "warm feeling" of cognac. Then comes the taste of sweet candy. This is not disturbing in this batch, but provides an exciting component within the whole. It remains beer and therefore has a specific bitterness. Here it is dominated by the wood tannins. In the aftertaste aromas of the malt and the grape are clearly recognizable.
