The Jakot of Princic is a kaleidoscopic and profound interpretation of Friulano, historical vine of the Collio. Dario is one of the pioneers of this magical strip of land that divides Italy and Slovenia, and gives life every year to extreme and multi-form wines, which provide as a established practice the maceration of white grapes in contact with the skins, giving life to real orange wine. 9 hectares of vineyard in Oslavia, divided between Friulano, Chardonnay, Sauvignon, Ribolla and red grapes such as Cabernet Sauvignon and Merlot, grown without any use of chemical or synthetic, with total respect for vines and biodiversity. The Jakot wine is derived from pure Friulian grapes, from vineyards of about 60 years old that rest on browny soils and rich in sandstone. The yield per hectare is about 40 quintals, and is kept low in order to favour the quality of the fruit at the expense of the quantity. All processes, from the vineyard to the cellar, take place with the least possible interventionism, so the grapes are harvested manually and the fermentations take place spontaneously and without temperature control. The maceration on the skins of the must has a duration of about 20 days, while the liquid before bottling is refined in large barrel for about 30 months and in steel for another 3. No clarification or filtration. The Jakot intrigues just poured into the glass with its beautiful intense orange robe. A complex and unsettling nose, it ranges from ripe peach notes to sweets that refer to cooked fruit and cinnamon. Then the spices, such as ginger and cardamom. Curious and unusual, however, it is on the sip that the liquid completely reveals its immense personality, a masterly combination of matter and freshness, which however maintains a noble and elegant bearing.
