The Santoku knife is the Japanese version of the chef's knife. The word 'santoku' means 'three virtues', which refers to the three cutting functions of the knife: slicing, dicing and chopping (fine, slices and cubes). Calling this versatility an all-rounder in the kitchen. The Forged knife is made of Japanese 440C steel with a hardness of 58 Rockwell. The knife is forged by hand, which makes each unique.
