Underwaterwine Cancellariidae is the maximum exaltation of Tintilia. Selected grapes, low yields and only free-run must envelop this full-bodied wine with character in fragrant mysteries. Name Wine Cancellariide - Premium Tintilia del Molise – Controlled Designation of Origin Vine Tintilia 100% Molise Area – Acquaviva Collecroce (CB) Altitude 500 m above sea level. Southern exposure, excellent ventilation, low humidity and good temperature range. Nature of soil Clayey, calcareous. Training system Espalier, spurred cordon. Density 4,000 vines/hectare Average yeld 50 quintals/hectare Limited production of n. 450 bottles of 750 ml. Harvest Between mid and end of October Winemaking Crushing-destemming of the grapes and traditional fermentation with maceration of the skins for 12 - 15 days at temperature checked and daily pumping over. Only the free-run must is extracted, Spontaneous malolactic fermentation follows. Maturation of the wine In steel tanks for 18 - 24 months, followed by refinement in the bottle for a minimum of 3 months. Refinement in the sea The bottles, carefully encapsulated, are placed on the seabed in steel cages, where they remain cradled by the harmonic currents of the sea at a pressure of approximately 4.8 atmospheres, with a constant temperature between 10/13°C.
