Umbrella is produced from the early harvest of Tintilia grapes, the only native vine of Molise, which come from selected vineyards in the hills of Molise Umbrella wine name Denomination Tintilia del Molise Rosato – Controlled Designation of Origin Tintilia grape variety 100% Molise Area – Acquaviva Collecroce (CB) Altitude 500 m above sea level. Southern exposure, excellent ventilation, low humidity and good temperature range. Nature of the soil Clayey, calcareous. Espalier training system. Spurred cordon Density 4,000 vines/hectare Yield per hectare 50 quintals/hectare Harvest Beginning of September Vinification Harvested by hand in boxes, the grapes arrive immediately in the cellar where they are destemmed; the skins remain in contact with the must for 24/36 hours. Maturation of the wine After fermentation with only indigenous yeasts, the wine rests in steel for 4 months Aging at sea The bottles, carefully encapsulated, are placed on the seabed in steel cages, where they remain cradled by the harmonic currents of the sea at a pressure of approximately 4.8 atmospheres, with a constant temperature between 10/13°C. The resurfacing takes place, with every delicacy and with controlled decompression, after a period varying between 6 and 8 months in relation to the marine and seasonal weather conditions.
