The Spinetta Barbaresco Gallina represents the story of a family that had as a dream in the drawer the construction of a large cellar for the production of Piedmontese red wines. The dream has come true and today La Spinetta produces the Barbaresco Gallina DOCG. The vineyards are located in the locality of Gallina, Neive. They are between 35-45 years of age. The exposure is to the south with an altitude of 270 meters. The microclimate is ideal for the production of red wines from aging. The soils are of a calcareous nature and the breeding system is in Guyot. The vine used for the production of Barbaresco is 100% Nebbiolo. The variety has found here ideal conditions for good vigor and development. It is thought that its name is due to the morning fogs that especially in the autumn envelop the bunches. The harvest begins in a period between the beginning and mid-October when it is believed that the maturation of the grapes is ideal for starting winemaking. The grapes are harvested manually in boxes and joined in the cellar undergo a soft pressing process in order to protect the organoleptic characteristics. The maceration and fermentation process takes about 7-8 days and is conducted in rotofermenters at a controlled temperature. Subsequently, the wine is placed in oak wood barrels until the malolactic is completed. Then, we proceed with the placing of the wine in new barrels for about 22 months. At the end of this period it is left to rest in steel tanks for about 3 months before being bottled. The aging in glass continues for another 12 months.
