** RARE ** MAGNUM PLEIN SUD GANEVAT 2022 ** NO RESERVE PRICE ** The cuvée Plein Sud is made from a blend of grapes from old Trousseau vines (planted in 1949) and younger vines. Fermentation is carried out without pumping over or punching down, resulting in a very clear colour and a wine that has only undergone a light extraction. The result is a harmonious wine with a pronounced fruit character, splendid structure, smoothness and finesse. Jean-François Ganevat is the former maître de chai (cellar master) of Jean-Marc Morey in Chassagne-Montrachet. Once this experience was over, he decided to return to the Jura in 1998 and take over the reins of the family estate. The vineyard today covers an area of 13 hectares and includes numerous grape varieties. It is cultivated according to the principles of biodynamic (without certification) and natural farming, and by parcel selection (the estate produces around fifty cuvées). The vineyards, which are relatively old and come from mass selections, are kept with great care. Yields are low and vinification in the cellar is extremely delicate. Some reds are aged inside amphorae and reach a very high level. This estate represents one of the greatest revelations in recent years among the wines of the Jura, and its rare production is highly appreciated by wine lovers.
