ONLY 2797 BOTTLES!!! Here, a new, young winemaking talent wants to explore the potential of its grapes and sites in Chezy-sur-Marne in the western Marne Valley. Chezy is a remote place on a small river where hardly anyone else makes champagne, Tom Gauditiabois tells us, adding, "But my goal is to put Chezy on the champagne map." Currently, his production facility is still in a hall in Épernay, but construction of the Chezy winery is underway and vinification is scheduled to take place on site as early as 2023. Tom drew inspiration from time spent abroad in New Zealand and working with Anselme Selosse - a time that had a great impact on him. As a result, he began making about 1,000 bottles of his own Champagne in the 2016 vintage, aged in wood. So far, each cuvée is quite different from the previous one: individually adapted to the vintage and the grape ripeness. His first vintage was a single-varietal Pinot Meunier, but the 2017 is composed of 50 percent Pinot Noir and 25 percent each of Chardonnay and Meunier. Tom wants to get to know his terroir and gain experience in order to get closer and closer to his idea of champagne over the years. He works with fully ripe grapes, very low dosage and uses little sulfur. About three years lasts the storage sur lattes, but this is to be extended in the future in the direction of five years.
