Patience is the key word of this estate: as in the vineyard, vatting requires time so that the tannins are extracted after long days of maceration punctuated by regular punching down. Fermentation is followed by vatting spread over three weeks. The wine is then aged in oak barrels for 20 months. The Mourvèdre which makes up the majority of this cuvée offers a beautiful fullness to the wine and well-defined tannins. When tasting, we find notes of forest fruits and sweet spices. It is a long-lasting wine that matures over time while retaining a typical southern elegance.
