It consists of a cast iron cylinder that ends at one end with a hole where you can apply a gut diameter sized funnel to fill. At the other end a piston, pushed by a rack railway operated by the user compresses the ground beef that was introduced into the cylinder. The base is made of wood. In the preparation of Salamis compression of ground beef is needed to ensure no air bubbles inside the sausage form that may result in harmful consequences during the curing process.
