Tamagawa Yamahai "Cuvé Sauvage" is an amazing and powerful sake made by the slow brew method Yamahai.
The fragrance of this sake has a strong nose of aromas of pear, leather and dark chocolate.
The flavours are powerful, the sake is a bit woody but really refreshing as a William pear.
This traditional slow-brew kimoto sake is made with organic rice, specially grown to support the stork population near the brewery. Slightly woody aroma and taste, matured for four years. Full of flavour, but not heavy and easy to share with a wide range of dishes.
