The work from the beginning has always focused on searching for old vines in the most genuine and least explored places in the Douro, where there are new stories to tell in the form of wine. It was at the foot of Serra do Reboredo (1,000 meters high), in Paredes da Beira, at the highest point in the Douro, that it all began. Surrounded by an abundance of granite outcrops, the area has sandy granite soils interspersed with quartz veins, altitude between 700 – 1,000 mts, located on the slopes of the Távora River and has an enviable heritage of centuries-old vineyards, untouched over time and maintained by hands weathered by years of hard work for generations. This results in wines of great freshness, character and identity! The focus will always be on leveraging the best that the vineyard offers, respecting its history, tradition and the essence of its people. VINIFICATION Fresh grapes at their ideal point of ripeness, picked by hand into 20 kg boxes, are transported to the winery where they were subjected to careful manual selection, de-stemming and gentle crushing, followed by skin maceration in a stainless steel tank for 48 hours. Without decantation, the must was transferred to small clay pots, where through its porosity there is a slow mechanism for concentrating the wine. TASTING NOTES Intense straw color. Mineral, floral and fresh clay aroma, with some notes of menthol. In the mouth, good sensation of freshness and unctuousness. SERVING Enjoy dishes with a delicate flavor. VINIFICATION Fresh grapes at their ideal point of ripeness, picked by hand into 20 kg boxes, are transported to the winery where they were subjected to careful manual selection, de-stemming and crushing by foot in a granite mill, where two thirds of the fermentation takes place, with the last third and the following 16 months of aging, in small clay pots, where through their porosity there is a slow mechanism for concentrating the wine. TASTING NOTES Ruby colored wine with brick tones. Expressive aroma: balsamic notes, fresh red fruit, spice, graphite and pottery. In the mouth, great texture and volume, robust and with silky and greedy tannins. SERVING Enjoy dishes with an intense flavor such as red meat, game, wood-fired roasts and cheeses. Serve at 17ºC – 18ºC.
