Fermentation is carried out at a controlled temperature of 26º, in small-capacity Allier wooden vats. It then undergoes malolactic fermentation in fine-grained Allier oak barrels. The aging lasted, for the 1994 vintage, 26 months (it varies according to the characteristics of each vintage). Once this is finished, the wine is bottled, undergoing a refining period of no less than 2 years before going on the market." "A wine that at the time of its launch revolutionized the until then conservative Rioja wine sector. Mainly because it comes from one of the oldest and most traditional wineries, Marqués de Riscal (founded in 1860), but also because its fruity and concentrated character inaugurated the fashion for wines that have become known as "high expression". Thus, Barón de Chirel - which is only made in the best vintages - has been a pioneer in a style with many followers."
