It is only made when the harvests are exceptional. This wine is designed to last and improve over time. The harvest is carried out manually from selected vineyards, with a double selection of grapes both in the vineyard and in the winery. Whole bunches are cold refrigerated to improve fruit extraction and color stability. The crushed grapes are transported by gravity to small oak vats for cold maceration for a few hours. It is then fermented with native yeasts at a controlled temperature between 28 and 29ºC. During fermentation, bazuqueos and delestages are carried out daily, as well as tastings to determine the ideal moment for draining the vat.
