Javier was director of the Regulatory Council of Ribera del Duero for 6 years after which, in 1999, he founded AALTO wineries together with Mariano García and other partners and later, in 2005, he founded Bodegas Ossian in the D.O. Roll with Ismael Gonzalo. In 2007 he began testing what would become SEI SOLO years later, looking for a different way of making Tempranillo from Ribera del Duero to enhance the fruit, finesse and elegance, even if this meant less tannic structure. Finally, in 2013 the first wine came onto the market: the 2011 vintage. In 2015 his son Michael joined the project as technical director. Starting with the 2018 harvest, with the transfer of the winery to new facilities in Roa de Duero, the work philosophy in the vineyards and in the winery was further refined. This is why every year more emphasis is placed on the vineyards of La Horra, producing plots in stainless steel tanks of different capacities, carrying out fermentations that are very respectful of the grapes, carefully controlling temperatures and simply seeking a harmonious development of the process. without major interventions.
