Dom Pérignon is exclusively a Millésimé Champagne, which is reinvented every year. But Dom Pérignon is also 3 different times of development, 3 different stages of aging that reveal the characteristics of the cuvée without ever denying its personality. Firstly, there is the first fullness, that of energy, which is revealed after a minimum of seven years of maturation on the lees. They are Vintage vintages. The second fullness, called P2, is that of intensity; after a minimum of twelve years of maturation on the lees, the aromatic palette of the wine is magnified. The third plenitude, called P3, comes after a minimum of 20 years of aging, and is that of complexity and depth. The blend (Secreto) varies for each cuvée depending on the vintage, but remains close to an equal split between Chardonnay and Pinot Noir (with a very small majority of Chardonnay). The grapes come from Grands Crus such as Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize, Mesnil sur Oger... and from a Premier Cru, Hautvillers, the famous village where Dom Pérignon lived, monk of the local abbey, notable winemaker for his work at the time. The first cuvées, Vintage, have existed since the 1921 vintage; For 1990, we can talk about a difficult year. After a mild winter, flowering took place in difficult conditions, with low temperatures and rain. The scorching summer that followed lasted until the eve of the harvest, when heavy rains began to fall. The harvest produced juicy berries at their optimal ripening point. The resulting wines are exceptional for their quality and homogeneity. The nose offers intense and delicate aromas of jasmine and candied ginger, and some warmer notes, surely due to the vintage, of cinnamon and toasted bread. The palate is incredibly broad, firm and fine at the same time, offering a concentrate of honey, nuts, apple pie and sweet spices. The silky, long finish is reminiscent of candied citrus, and the still remarkably lively bubbles affirm a surprising youth for this wine. A persillé of lobster with truffles is the ideal companion for this Dom Pérignon Millésimé 1990, but a fillet of turbot beurre blanc will also delight.
