This is a Yanagiba knife crafted in Niigata, one of Japan's three major knife-producing regions. This is a long-cherished old knife from the Showa era that has been expertly polished, sharpened, and rejuvenated by skilled artisans. Regarding the polishing, it has been finished to a mirror-like shine. Please refer to the 10th photo. Furthermore, concerning the sharpening process, it was sharpened gradually starting from a 200-grit edge, with the finishing touch achieved at 6000 grit.
