ALIGOTÈ, THE WINE OF TRADITION In the beginning it was Aligotè, the son of a spontaneous cross between Pinot and Gouais Blanc, for a long time considered the oldest native white grape in Burgundy, then supplanted by the much better known Chardonnay. Yet, traditions die hard, especially for David Moreau, a promising young man from Santenay who, in a very short time, was able to make his way by taking over 5 of the family's 9 hectares, after a long experience between France and New Zealand. His Aligotè is produced in a few bottles that speak of a wine from times gone by, rediscovered and rediscovered as one of the most faithful readers of the Burgundy terroir. Aged in pieces of used wood that smooth out the edges, it is a wine we will hear about, just like David, to keep an eye on! Bright, almost brilliant straw yellow colour, it has an enchanting nose of citrus fruits, white flowers and green apple, then basil and toasted almonds with slightly smoky hints in the background. Fresh tasting, well calibrated by a soft glycerine note and, secondly, almost saline, accompanies a generous fruity-herbaceous persistence. With mussels au gratin but also an asparagus omelette, it is delicious with a smoked salmon fillet.
