2 x Henri Chauvet - Abrupts Bottles in excellent condition Shipping with UPS or FedEx + 100% insurance Originally from the South-West - from Brive to be precise - and graduated from a business school, Henri Chauvet began working in the banking and insurance sector. He began to take an interest in and appreciate wine, hence his wish to take a BTS in viti-oeno which he will complete in 2020, after a short experience at Domaine Gourt de Mautens. He will complete his training with Thierry Allemand, an emblematic figure of Cornas who needs no introduction. It was only in 2021 that Henri Chauvet took over Domaine Sauvat, a pretty estate located in Boudes, in Auvergne. It is therefore in the land of volcanoes that Henri Chauvet decided to settle, on around 10 hectares of vines, composed mainly of Gamay and to a lesser extent Pinot Noir. Finally, Chardonnay makes up 10% of the grape varieties. The diversity of terroirs is quite unique here, in the sense that it brings together: clay-sandy terroirs rich in iron oxide, volcanic terroirs very rich in basalt with blue marl, clayey terroirs or even volcanic terroirs with ashes. and limestone veins. This is partly what made Henri Chauvet fall for this place, not to mention the charm and beauty of the landscapes of this little piece of hilly Auvergne. In the cellar, there is no dogma of 'sulphur-free', but a preference for vinification and aging without any inputs. Henri Chauvet is not opposed to the use of sulfur if necessary, keeping as a priority the preservation of the typicality of the terroir he vinifies.
