However, we take the utmost care in buying these wines, convince ourselves of optimal storage conditions, check the history of the bottles as far as possible and also carry out visual inspections of the bottle contents for cloudiness and consistency changes. As already mentioned, older mature wines change their original taste during the decades of storage and sometimes have a ripe clay. White wines often tend towards a darker color, some cognac, sherry or amber and can form tartar, red wines often form a depot on the bottom of the bottle. A different visual and taste experience compared to young wines is not uncommon for mature wines. For wine drinkers who have problems with the partly fresh, pronounced acidity of young wines, matured wines can be a real blessing, as the wine acid loses its power and aggressiveness over the years.
