Established in 1829 Bollinger achieved their distinguished reputation under the stewardship of Lily Bollinger, who took over the reins in 1941. Typically, the house style favours those preferring richer, fuller-bodied expressions of Champagne, accentuated by the domineering Pinot Noir. The 2012 blend is comprised of 65% Pinot Noir and 35% Chardonnay from 21 separate crus. The vast majority of the Pinot Noir hails from Aÿ, which defines the wonderfully rich texture of this vintage. The smaller portion of Pinot, coming from Verzenay, provides superb structure and vigour to the wine. Most of the Chardonnay comes from the famous commune Le Mesnil-sur-Oger, which delivers vivacity and freshness. Continuing tradition, the 2012 was fermented entirely in small oak barrels and aged for twice the time required by appellation law, before finishing with a reasonable dosage of 8 grams per litre.
