Midleton Dair Ghaelach, which simply means "Irish oak", is the result of six years of exploration by the masters of Midleton of the use of native oak for the maturation of Irish whisky. Under the direction of the maturation master of the time, Kevin O'Gorman, the two prerequisites for the project were to source Irish oak in a sustainable, long-term way, and to create a new and exceptional style of Single Pot Still Irish Whiskey. This whisky is part of a selection of spirits that have been aged in barrels made from virgin Irish oak from forests across Ireland. The oak selected for each edition influences this special whisky with the true and unique flavour of Ireland. For this series, the oaks come from the Kyleberg forest on the Ballykilcavan estate. Under the wise supervision of David Walsh-Kemmis who manages the majestic oak stands of Kylebeg Wood, seven trees have been carefully cut down to produce the best Irish oak barrels for the last chapter of the Dair Ghaelach series. Its provenance is told in every sublime sip, it is the story of native oak in harmony with the classically rich and spicy character of Single Pot Still Irish Whiskey. It is a whisky that is unlike any other. The history of each bottle of Midleton Dair Ghaelach can be traced back to the oaks that helped create its refined and inimitable taste. Once harvested in Kylebeg, the oak logs were shipped to the Spanish region of Galicia and the Maderbar sawmills in Barralla where, for more than fifty years, the same family has been working the wood. This is where the wood was cut, according to the traditional artisanal method of neighbourhood sawing. Then, the douelles, precisely shaped and sharpened, made the ten-hour trip from the sawmill to the Antonio Paez Lobato cooper shop in Jerez, where they were spread out to dry naturally under the heat of the Spanish sun. Fifteen months later, Kylebeg's oak dowels were ready to be worked and gave rise to 42 barrels, each of which was lightly grilled to the specifications established by master distiller Kevin O'Gorman. Finally, Dair Ghaelach Kylebeg's oak barrels returned from Spain to Midleton, where they were filled with a specially selected range of Fifteen to Twenty-eight-year-old Single Pot Still whiskeys, previously aged in American oak barrels. The Midleton Dair Ghaelach is not cold filtered, it is bottled with the force of the barrel ( cask strenght)
