The Hakushu distillery is one of the highest in the world. In 1973, Yamazaki distillery founder Keizo Saji chose the forests of Mount Kaikomagatake in Japan's southern Alps to found a second distillery, Hakushu. The surrounding forest is home to almost 6,000 species of plants, twice as many as in Western Europe.
The single malt whiskeys produced in this region benefit from a microclimate, lush forests and water of rare sweetness and purity, filtered through a granite rock.
