Cà Rovere” Brut Millesimato Name: VSDQ. Company: Cà Rovere, Alonte (Colli Berici, Vicenza, Veneto). Viticulture: Conventional. Grapes of origin: 100% Chardonnay. Soil: Limestone-clay of marine origin with the presence of fossils, minerals and an important chalk vein near the company. Breeding: Guyot. Vinification: Classic Method with temperature-controlled steel fermentation. Aging: After 6 months on the fine lees the wine is put in the bottle where, according to the Classic Method, it remains at least 48 months on the yeasts for the intake of foam before the outlet. Dosage: Brut 5.3 g/lt. Alcohol content: 12% vol. (2017/s.23). Serving temperature: 6-8°. Annual production: 15,000 bottles (50,000 company total). Organoleptic notes: In the glass it is straw yellow, crystalline, with an elegant perlage. The scent is intense and complex with citrus notes of cedar, dehydrated apricot, acacia flowers and zagara. Snints of yeast, honey, iodized notes. At the sip it is enveloping, with a silky foam. Get soft into balance with the long fresh-sapida shoulder. Fruity calls persist in a dry and savory finish. Gastronomic pairings: Excellent as an aperitif and with fine fish courses: baccalà alla vicentina, raw fish carpacci, lobster in bellavista and sea bream in the cartoccio. Notes: The company has over 30 hectares of vineyards but sells most of the grapes (hand harvested), vinifying only the best. Synthetic chemicals are not used.
