GRAPE VARIETY Schioppettino – native. Vineyards grown with a double upside-down and Guyot training system, the planting density per hectare is on average 5,000 vines/hectare. PRODUCTION AREA On the La Viarte estate in the Colli Orientali del Friuli in the municipality of Prepotto in 24 hectares of single-body hilly vineyards at c.a. 150/200 m. above sea level with exposure to the East and South-East, the lands of Eocene origin locally known as "Ponca", are composed of stratifications of marl and sandstone. WINEMAKING The harvest is carried out by hand with selection of the bunches, followed by a soft pressing of the grapes and a maceration on the skins for 15/20 days. The fermentation takes place at temperatures between 25 and 28 degrees with frequent pumping over. The refinement takes place in French overe barriques and tonneaux for 24/30 months and subsequent refinement in the bottle for at least 48 months before being put on sale. ORGANOLEPTIC CHARACTERISTICS Ruby red color with violet hues, spicy with pink pepper with notes of wild blackberry, raspberry, blueberry. Elegant and fresh wine, excellent structure and strong typicality, juicy finish of red fruit with typical peppery note. TEMPERATURE Serve at 18°C ​​in a large glass. COMBINATIONS Cured meats, first courses, red meats, cheeses.
