It is a selection of vineyards that remain unharvested until their best moment of maturation, usually being the last to enter the winery. Each grape variety is vinified separately. Alcoholic fermentation in 10,000-litre wooden vats, without temperature control or the addition of yeast, after which it is transferred to other clean, large-capacity 16,000-litre vats, where it remains for 12 months. Transferred again and aged for 36 months in 570 225-litre American oak barrels, most of them made by the winery's own cooperage. Clarification with fresh egg whites before bottling. Production limited to 169.997 bottles of 75 cl. A minimum of 36 months of aging in a bottle rack in the cellar's drafts before being marketed."
