The seal number(s) you see on the photos might differ from the one(s) on your bottle(s). 2021 CARM Reserva Red 6 x 0.75L DESCRIPTION CARM is a company that is still entirely owned by the family that launched its activity, with records dating back to the mid-17th century. The agricultural operation has always been focused in the region where the Douro River begins its course exclusively in Portuguese territory. This is also where the oldest demarcated wine region begins – the Demarcated Douro and Port Wine Region. Our goal has always been to produce high quality olive oils and wines, using only olives and grapes from our estates, with approximately 60 hectares of almond, 220 hectares of olive groves and 200 hectares of vineyards located around the village of Almendra, in the best part of the Upper Douro, included in the Côa Valley Archaeological Reserve. We have been winegrowers in our estates in the Upper Douro, surrounding the village of Almendra, since the end of the 19th century. Our oldest vine was planted in 1966 and, ever since, we have continued to plant and improve the selection of clones of traditional grape varieties, and introduced organic production methods. VINIFICATION The wine is vinified in the cellar of our Quinta das Marvalhas in Almendra, in the heart of Douro Superior. Our winery is equipped with the latest technology and enables complete control of temperature, essential for our region of extreme climates. After grapes arrive at the winery, we eliminate clusters which are not in perfect condition. After total de-stemming, the grapes are crushed softly and pass through a thermal shock, followed by a period of cold pre-fermentative maceration of about 12 to 24 hours. The must is transferred to broad and low fermentation stainless steel vats, where the maceration occurs for 8 days at 22ºC. Aging 18 months in extra fine grain oak barrels and 30% American. TASTING NOTES The wine’s nose is very fresh and intense with notes of wild black fruits and black cherries balanced with seductive hints of licorice. Subtle notes of wood make the aro-ma more complex. In the mouth, the wine is fabulously concentrated, hot, showing firm tannins and a smooth texture as well as a very persistent finish that strongly displays the intensity of the wines of the Douro Superior. SERVING This wine pairs with meats, cheeses and, in general, Mediterranean cuisine. Store in a horizontal position, in a cool and dry place, protected from light and temperature fluctuations. Serve at a temperature between 16ºC and 18ºC. Consume in moderation.
